A chef who trained at the Institut Paul Bocuse — Lyon's most prestigious culinary school — now runs a Vietnamese street food canteen on Willesden High Road, and the fusion works better than it has any right to. G Asian Canteen is Chef Gilles Brem's rethinking of the dishes he fell in love with through the lens of the classical technique he was taught, and the result is a restaurant that opened in 2023 and immediately earned a perfect 5.0 Google rating.

The pho here started life as a pot-au-feu and came full circle. Neo-industrial décor built from second-hand furniture and reclaimed materials gives the room texture and warmth that new fit-outs rarely achieve. Three large communal tables seat eight each, encouraging the kind of shared, social dining that matches the food's street-food roots. Biodegradable packaging extends the eco-first philosophy beyond the décor.
